Lavender honey is made from the flowers of narrow-leaved lavender, known as the medicinal lavender. This plant likes a warm climate. Large lavender fields, which will provide the right amount of flowers for honey production, can be found mainly in the south of Europe, which is why some of the best lavender honeys come from Spain and French Provence. Lavender flower honey is extremely aromatic. Its flavor is intense, sweet and floral at the same time. Sometimes you can feel a slight bitterness in it. The aroma, on the other hand, is mild, although you can sense a delicate scent of lavender in it. Due to the perceptible lavender aroma, it is quite characteristic honey. Before crystallization, which is slow in the case of lavender honey, it is light yellow or amber in color. Over time, the honey takes on a creamy consistency while turning lighter in color. Of course, the crystallization process does not affect its health-promoting properties.

Lavender honey is the highest shelf of European honeys. They are rich in flavonoids, antioxidants, minerals and vitamins, as well as essential oils. Thanks to their distinctive taste, they are perfect in the kitchen as an addition to cakes, desserts and ice cream.

 

The unique properties of lavender honey:

➢ large amounts of simple sugars have a very positive effect on the heart and circulatory system,

Lavender honey, as well as other honeys, is primarily a source of carbohydrates. Lavender honey has a relatively high sucrose content compared to other honeys. Nevertheless, the high content of easily digestible sugars makes this honey perfect for convalescents, weakened people, and athletes - that is, all those who need more energy. Lavender honey can also have a mild calming effect because, like all lavender products, it is a source of essential oils from the terpenes group, including pinene, lineol, geraniol, borneol, and cineole. Lavender oil also has an antibacterial effect and destroys streptococcus bacteria, bacteria that cause typhoid and diphtheria, among others. Lavender honey can be used by people who need a supply of easily digestible energy. However, the main application of lavender honey is in the treatment of respiratory diseases and infections such as colds and flu. Lavender honey can be used in states of mental and physical exhaustion, during periods of increased effort and excessive stress. It is worth remembering that lavender has a significant calming effect. Honey will also be useful for people who suffer from a lack of appetite or nausea, because it has properties that increase the desire to eat and soothe ailments of the digestive system. They improve digestion. Lavender honey contains vitamins, mainly from group B, and minerals (e.g. magnesium or potassium). One of the unique ingredients of this honey is its essential oil, which has a relaxing and antimicrobial effect. In turn, lavender honey owes its antioxidant properties to the flavonoids present in it, which have a beneficial effect, among others. on the blood vessels, lowering blood pressure. Antibacterial properties combined with the addition of essential oil mean that lavender honey can be used externally, e.g. for skin blemishes, acne lesions and in the case of insect bites. For the same reasons, it is recommended to reach for lavender honey during infections and inflammations. Revitalizes and regenerates hair and skin.

Contraindications:

Honey is a product rich in sugar, and therefore also high in calories. A teaspoon of honey is about 40 kcal, so it's better to stop at 3-4 teaspoons a day (maximum). It should not be consumed in excess by people suffering from diabetes, because honey has a high glycemic index and can quickly raise blood glucose levels. Honey is not recommended for consumption by infants due to the natural content of some pathogenic bacteria in honey.

 

 

Remember not to subject honey to a temperature higher than 40 degrees Celsius, because at this temperature the beneficial enzymes and proteins contained in it are destroyed and its therapeutic value decreases.
